A few weeks ago, I was contacted by Loacker, an Italian dessert company that makes a wide range of delicious wafer-based treats, asking if I wanted to participate in their #PureIngredients Recipe Contest. As one of 25 selected bloggers, the contest had me creating a recipe incorporating Loacker wafers. So I hunkered down this weekend in my lab (kitchen), and plugged away....
...24 hours later, after a lot of tweaking and turning, I finally perfected my masterpiece (don't worry, the final recipe only take less than 45 minutes to make). The final product? Well its Death by Caramel Chocolate Loackers - not only rich, gooey and chewy, but also super easy and quick to make (because really, who wants to spend all day in the kitchen)!!
Death by Caramel Chocolate Loackers
Serves 8

Prep Time: less than 10 minutes
Bake Time: 30-35 minutes
1 box of brownie mix (I used Duncan Hines Salted Caramel Brownie Mix)
1/2 cup of crushed Chocolate Loacker wafers
1 egg
1/3 cup water
1/3 cup oil
1/3 cup chocolate chip morsels (I used Enjoy Life's Dark Chocolate Chips)
1/4 cup caramel drizzle
1/2 cup melted chocolate fudge (I used Dave's Homemade)
whole Chocolate Loacker wafers (for garnish)
1. Preheat oven to 350 degrees. Grease bottom of pan with shortening or cooking spray. Mix brownie mix, egg, oil and water in a large bowl.
2. In a separate bowl, crush 1/2 cup of Chocolate Loacker wafers (~15 pieces). Stir into brownie batter and blend until well mixed.
3. Spread mixture into round pan and add chocolate chip morsels on top. Drizzle caramel in lines. Use a knife and drag across batter for a marbled effect.
4. Bake for 30-35 minutes. After brownies are done - cool for 5 minutes.
5. Cut 1/8 of the pie and drizzle with chocolate fudge. Add more Chocolate wafers for garnish and ENJOY!
